A premium, cocktail-inspired single cask, cask strength single malt, matured exclusively in a Spanish Oak ex-Pedro Ximénez sherry cask from Jerez. Rich and oily in texture, with notes of rancio, muscatel grape, and dense dark fruit, this whisky was selected with one purpose in mind: to elevate the Manhattan.
The PX cask brings a natural architecture perfectly suited to the cocktail. Its deep sherry sweetness mirrors the role of vermouth, while the whisky’s weight and oxidative complexity provide the backbone that allows the drink to remain balanced rather than diluted. Dark raisin, dried fig, and polished oak lend gravity, while subtle muscatel brightness keeps the profile lifted—creating a whisky that doesn’t disappear into a Manhattan, but anchors it.
To serve: build your Manhattan with intention. Combine the PX sherry-cask whisky and sweet vermouth over ice and stir for a full 30 seconds, allowing the dilution to awaken layers of dried orchard fruit and polished spice. Strain into a chilled martini glass, add a whisper of chocolate bitters, and express a ribbon of orange oil across the surface. Garnish with an Oloroso-steeped maraschino cherry, or for added indulgence, introduce a touch of macadamia-infused syrup to amplify the whisky’s natural nutty depth and viscosity.
