Lapis legit layer cake paired with a Baroque ex-PX Manhattan, Australian Single Malt

Singapore Liquid Gold Club | James Phang

6th January 2026

The finale in the trilogy, using Baroque's ex-PX cask as the soul for the Manhattan cocktail:

The nose opens with luscious waves of sun-drenched raisins, dark figs, and velvety toffee, layered over warm oak and a whisper of polished leather. As it unfolds, maraschino cherry and spiced vermouth glide in, adding a sophisticated herbal lift.
On the palate, silky caramel and rich molasses intertwine with bittersweet chocolate and candied orange peel, while rye spice and a subtle hint of wormwood lend structure and intrigue. The finish is endlessly decadent as honeyed dates and espresso linger, kissed by a delicate wisp of smoke and a dash of aromatic bitters.
Paired with prune kueh lapis, the experience ascends to pure luxury: the cake’s buttery layers and deep prune sweetness echo the whisky’s sherry richness, while its gentle spice and soft crumb amplify the cocktail’s complexity. Together, they create a sumptuous interplay of texture and flavor where heritage meets haute indulgence.
