Two cask types that occupy opposite ends of the flavour spectrum, the dense, oxidative sweetness of ex-Pedro Ximénez Sherry and the coastal smoke of an ex-Ardbeg barrel, are brought together here in a double cask maturation that demands attention. The tension between them is not a flaw in the design; it is the design.
Pedro Ximénez is among the richest, most concentrated sweet sherries in the world. Made from sun-dried grapes in Jerez and Montilla-Moriles, it delivers extraordinary density: dark dried fruit, walnut oil, bittersweet cacao, and a textural weight that leaves a lasting impression on any cask it inhabits. The ex-Ardbeg barrel brings an entirely different register, the distinctive Islay peat character with maritime brine, smoke, and a medicinal quality that is immediately recognisable.
The result is a whisky where neither influence dominates. Each asserts itself in sequence, creating a tasting experience that rewards patience and careful attention.
Tasting Notes
Nose. A revelation of indulgence. Rich, luscious aromas of dried fruits, figs, and raisins greet the senses, immediately followed by the unmistakable sweetness of Pedro Ximénez Sherry. Subtle hints of oak and vanilla emerge, hinting at the depth and complexity to come.
Palate. A harmonious symphony of flavours. The sweetness of the Pedro Ximénez cask takes centre stage, enveloping the taste buds in waves of caramel, honey, and dark chocolate. Yet, just as the sweetness threatens to dominate, the distinctive character of Islay peat makes its presence known. Whispers of smoke emerge gracefully, intermingling with notes of brine, leather, and a touch of spice.
Finish. Waves of Pedro Ximénez cask sweetness persist, while delicately balancing the lingering warmth of the Ardbeg barrel. Hints of oak and smoke remain, inviting contemplation of the whisky’s journey. Best paired with dark chocolate above 70% cocoa.
