Two American oak casks with contrasting previous contents, the dense, oxidative sweetness of ex-Pedro Ximénez Sherry and the bright, cherry-driven intensity of ex-Kirsch, are brought together in a double cask maturation of considerable character.
Kirsch, Kirschwasser, is a clear fruit brandy distilled from fermented Morello cherries, produced primarily in Germany, Switzerland, and Alsace. Unlike cherry liqueurs, genuine Kirsch is dry and intensely aromatic, with a pure cherry character that is not sweetened. A cask that has held Kirsch carries those concentrated cherry aromatics deep into the stave structure. The provenance of this cask type is unusual in Australian whisky and produces a fruit character distinct from any wine cask equivalent.
The ex-Pedro Ximénez Sherry cask provides the structural counterweight, density, dried fruit, walnut, and a sweetness that grounds the brightness of the Kirsch. Together they produce a whisky of remarkable complexity.
Tasting Notes
Nose. Rich aromas of sun-drenched fruits and velvety caramel dance elegantly, accompanied by a subtle whisper of spice that sets the stage for what lies ahead.
Palate. Luxurious waves of sweetness envelop the senses. Decadent notes of ripe cherries, plums, and apricots complemented by nuanced floral notes of orange blossom that add intriguing complexity, sophistication, and depth of character.
Finish. Long with a gentle fade; subtle yet satisfying warmth caresses the palate. Oak and spice dance gracefully, leaving an impression of depth and complexity. Dark chocolate notes emerge, adding an indulgent richness that entices another sip. Best explored alongside an aged cheddar or a considered charcuterie pairing.
