A melodic blend of contrary flavours. In this symphony, the opulent sweetness of Tawny Port dances hand in hand with the distinct Islay character of ex-Ardbeg peat notes, creating a harmonious and balanced, full-bodied masterpiece.
The pairing of Tawny Port and Ardbeg casks is a study in deliberate contrast. Tawny Port, aged oxidatively in small barrels over many years, contributes rich dried fruit, walnut, and honeyed sweetness. The ex-Ardbeg barrel introduces the coastal, phenolic, smoke-driven character unique to that distillery’s production. In a double cask maturation, neither influence is applied as a finish; both casks contribute throughout the full maturation period.
At 56% ABV this is a cask strength expression. A small addition of still water will open the aromatic complexity considerably.
Tasting Notes
Nose. A bouquet of sumptuous dark fruits, where succulent figs, raisins, and a medley of dried berries take centre stage. Mingling with this decadent fruit basket is the unmistakable essence of Islay peat, a maritime whisper that promises a sensory journey like no other.
Palate. Dark chocolate, salted caramel, and the luscious sweetness of the Tawny Port-soaked oak create a lush backdrop. Yet, as the symphony reaches its crescendo, the Islay peat introduces a unique medley of orchard fruits, green apples, ripe pears, and a subtle citrus zest that interweave with the intrinsic whispers of coastal brine and earthy campfire embers.
Finish. The mouthfeel, akin to satin, envelops the palate in a progressive embrace. The finish showcases the enduring appeal of Tawny Port’s sweet embrace and the Islay peat’s lasting influence. A natural companion to dark chocolate above 90% cocoa.
