This exceptional expression stands as a testament to the velvety richness of Pedro Ximénez Sherry and the artistry of time, oak, and alchemy.

Pedro Ximénez is the sweetest and most concentrated of all Sherry styles. Produced from sun-dried grapes left on esparto grass mats in the Andalusian sun until they shrivel to raisins, the resulting wine is extraordinarily dense, fig, walnut, dark dried fruit, coffee, and bittersweet cacao. The provenance of the cask, and specifically whether it is first-fill, is the determining factor in how much of that character transfers.

This expression uses a single cask throughout, no blending, no additional finishing. The character on the nose, palate, and finish is the product of one barrel, one spirit, and time.

Tasting Notes

Nose. An intricate dance of honeyed figs, decadent toffee, and a subtle hint of cinnamon.

Palate. The first sip delivers an explosion of flavours that unfold with grace and precision. Dark chocolate, orange marmalade, raisins, and dried muscatel grapes, all enveloped in the warm embrace of American oak vanillin. The influence of the ex-Pedro Ximénez Sherry cask imparts a luxurious sweetness that complements the inherent malt complexity, creating a harmonious balance that is enchanting.

Finish. The mouthfeel is velvety and indulgent. Layers of vanilla, caramel, and a subtle undertone of oak spice emerge, leaving an indelible mark of sophistication. A lingering crescendo, with echoes of dried dates, candied pears, and a gentle warmth. A triumph of maturation that deserves a place of honour in any discerning whisky collection.
