Apera is the Australian designation for what was formerly known as Sherry in this country, a fortified wine produced in the style of Spanish Sherry but from Australian-grown grapes under Australian conditions. The name changed in 2010 as part of a bilateral agreement protecting European geographical indications. Apera ranges from bone-dry Fino styles to rich, oxidative Oloroso-adjacent expressions, each leaving a distinctive imprint on the oak it inhabits.
The use of French oak is a deliberate choice. French oak has tighter grain and lower tannin extraction than American white oak, producing more delicate wood influence and allowing the cask’s previous contents to speak more clearly. The provenance of this cask is inseparable from its outcome.
Tasting Notes
