Nose: Toffee and caramelised green apple hit first, backed by a soft honeyed warmth. Bright and tart, with a freshness that keeps pulling you back for another sniff.
Palate: Tangy and full in the mouth. The tawny cask makes itself known without ever taking over, giving the raw spirit room to speak for itself. Spirited and assertive, this one still has plenty of fight left in it.
Finish: Long and lingering, with cracked black pepper and a warm ginger spice leading into a clean, grainy sweetness. Cocoa and a whisper of salted liquorice round it out, carrying real energy through to the end.
