Single Cask French Oak – Ex Paxarette Barrel

Matured in a heavily charred French Oak barrel seasoned with a centuries-old recipe of sumptuous paxarette, every element of craftsmanship across the board comes to the fore, to deliver a silky yet robust, unparalleled whisky. A symphony on the senses, deep brass in colour, that weaves an intricate dance of wood and liquid to take you on a sensory journey.

Paxarette is one of the oldest cask-seasoning traditions in Scotch whisky history, and one that has largely disappeared from modern production. A thick, sweet, fortified wine made in the Jerez region of Spain from Pedro Ximénez and Palomino grapes reduced by cooking, paxarette was historically used to condition casks before filling with new make spirit. Its use was banned in Scotch whisky production in 1989. In Australian single malt, no such restriction applies. The provenance of a paxarette-seasoned cask is therefore both historically rare and specifically Australian in its contemporary expression.

Tasting Notes

Nose. A fusion of French oak and paxarette greets the senses, offering notes of vanilla and caramelised sugar, reminiscent of Crème Brûlée. The paxarette’s touch introduces dried fruits and spiced raisins, adding body and another layer of depth.

Palate. Exquisite sweetness and delicate spices interplay, creating an enticing dance on the palate. With a silky entry, flavours unfold in perfect harmony, marrying depth and body with notes of orchard fruits, joined by figs, plums, and hints of dark chocolate.

Finish. A slow, satisfying fade. French oak takes the spotlight; echoes of dried fruits and a suggestion of cinnamon linger. An expression that rewards a considered cigar pairing.
