Single Ex-Pedro Ximénez Spanish Oak Cask
A finite Australian single cask whisky matured in first-fill Spanish oak previously seasoned with Pedro Ximénez sherry, constructed to showcase density, viscosity and provenance led maturation architecture.
This Premium Range release is designed for collectors seeking luxury Australian Single Malt with deep first-fill ex-Pedro Ximénez Spanish oak richness, natural colour, non-chill filtered texture and highly finite allocation. Where a cask came from matters as much as what was in it, and this Jerez seasoned oak carries genuine sherry pedigree.
Australian climate maturation intensifies the interaction between spirit and oak through repeated barrel expansion and contraction, amplifying concentration while reducing final yield through the angel's share. Limited to only 60 numbered bottles worldwide.

Nose
Dark fig, raisin syrup and polished walnut rise immediately from the glass, supported by molasses, espresso crema, cocoa powder and antique oak oils. With aeration, dried orange peel and mature sherried fruit reveal deeper aromatic concentration and cask driven complexity.
Palate
An intensely viscous palate unfolds with date loaf, burnt sugar, dark chocolate and PX richness. Drying Spanish oak tannin provides structure while natural cask strength warmth carries the whisky without excessive heat or cloying sweetness.
Finish
Long, warming and persistent with fading cocoa bitterness, walnut skin, dried orange peel, antique wood oils and structured sherry cask spice.
Maturation Philosophy
This expression is built around the relationship between first-fill Spanish oak, Pedro Ximénez cask provenance and Australian climate maturation. Rather than relying on age alone, the whisky is shaped through oak architecture, thermal movement and controlled concentration.
Australian Climate Influence
Australia's climate accelerates oak interaction as the barrel expands and contracts across temperature shifts. This movement draws the whisky deeper into the wood, increasing extraction, mouthfeel and flavour density while the angel's share reduces total volume and heightens rarity.
Collector Positioning
Designed for private whisky cellars, collector allocations and connoisseurs seeking authentic single cask provenance and luxury sherry cask identity. The earlier PX expression in this lineage is documented in The Archive, and our guide to building a private whisky cellar places it in context.
Serving Philosophy
Best experienced neat in a fine tasting glass. It is also structured to elevate a Premium Manhattan through PX richness, integrated spice, texture and aromatic depth.
Pairings
PX driven density pairs naturally with dark chocolate and Maduro wrapper cigars. See our cigar pairings and the full Baroque pairings guide.
